Ingredients

  • 1 medium cauliflower
  • 1/2 cup natural peanut butter
  • 1 tbsp lime juice
  • 1 tbsp tamari sauce
  • 1 tbsp maple syrup
  • 1 tbsp almond milk
  • 1/4 tsp sesame oil
  • 1 clove garlic minced very finely

Instructions

  • Preheat the oven to 350F.
  • Chop cauliflower into florets.
  • Arrange florets on a baking sheet in a single layer.
  • Roast cauliflower about 30 minutes. Cauliflower should have slightly browned edges.
  • In a small bowl, add peanut butter, lime juice, tamari, maple syrup, garlic, sesame oil and almond milk. Use a whisk to combine ingredients. Add more milk or water if your mixture needs thinning out.
  • Once cauliflower is roasted allow it to cool 5-10 minutes or until it can be handled.
  • Put 4 florets on each skewer.
  • Serve hot.

Notes

If you cook cauliflower on the BBQ instead of the oven, the skewers must be soaked in cold water for at least 10 minutes. 
The recipe calls for 1 tbsp of almond milk or water. Depending on how thick your peanut butter is, more may be needed to get the desired consistency of your sauce.
