- 1 red onion thick slices
- 2 peppers (any colour) seeded, thinly sliced
- 2 lbs flank steak thinly sliced against the grain!
- 1/2 cup olive oil
- 1 tbsp ground cumin
- 1 tbsp chili powder
- 1 tsp oregano
- 1 tsp smoked paprika
- 1 clove garlic minced
Set the oven to broiler setting.
Arrange steak in the middle of the sheet pan. Arrange peppers and onions around the steak.
In a small bowl, whisk olive oil, spices and garlic together.
Drizzle olive oil mixture over peppers and steak.
Cook under broiler for 12 minutes. Check steak for preferred doneness. Broil a few minutes longer if needed.
Serve steak and veggies in a bowl or on a gluten free wrap. Serve with cauliflower rice for a bigger meal. Serve with your favourite toppings like guacomole, shredded cheese and salsa.
