Equipment

  • 1 small bowl
  • 1 Frying pan
  • 1 wooden spoon

Ingredients

  • 500 grams ground pork
  • 1 bag raw coleslaw (397 g) or 4-6 cups shredded cabbage
  • 1 cup matchstick carrots or 1 grated carrot
  • 1 cup frozen peas
  • 1 tbsp ginger grated or minced
  • 2 tbsp tamari sauce or GF soy sauce
  • 2 eggs
  • 3 green onions chopped; use both white and green parts

Instructions

  • In a small bowl, add eggs. Stir with a fork. Set aside.
  • In a frying pan, add 1 tbsp oil over medium heat. Add ground pork. Break up with a wooden spoon and cook until browned.
  • Add ginger and stir in with wooden spoon.
  • Add coleslaw, carrots and frozen peas. Cook down about 5 minutes.
  • Add tamari sauce and stir.
  • Create a well in the middle of your pan. Pour eggs in. Once they begin to set, use your wooden spoon to scramble eggs. Once eggs are scrambled to your liking mix into the rest.
  • Garnish with green onions. Serve hot.

Notes

Substitute ground turkey or beef for pork.
