20 minute Ginger Beef & Cabbage Bowl

This is an easy, healthy, budget friendly dinner idea that comes together in minutes. Great for when you have lots of cabbage in the fridge to use up. Healthy and delicious.

Equipment

  • 1 Frying pan
  • 1 wooden spoon

Ingredients

  • 1 tbsp olive oil
  • 1 white onion diced
  • 500 grams ground beef
  • 1 tbsp grated ginger
  • 2 cloves garlic minced
  • 1 cup matchstick or grated carrots
  • 4 cups shredded cabbage
  • 3 tbsp coconut aminos, tamari or GF soy sauce (coconut aminos has the least sodium)
  • 2 tbsp sesame oil
  • 2 green onions (scallions) white and green parts sliced

Instructions

  • Over medium heat, add 1 tbsp olive oil. Saute onion about 2 minutes.
  • Add ginger and garlic. Saute 1 minute.
  • Add ground beef and cook until browned. About 5-7 minutes.
  • Add carrots and cabbage. Saute until it's tender.
  • Stir in tamari sauce, sesame oil.
  • Garnish with green onions.

Notes

Substitute raw coleslaw in a bag in place of shredded cabbage.
Substitute ground turkey, chicken or pork for beef.
