Ingredients
4mediumsweet potatoespeeled and diced
2tbspolive oil
2tspchili powder
For the Hamburgers:
500gramsground beef or 4 store bought hamburgers*see notes
salt & pepper to taste
1/2tspgarlic powder
1/2tsponion powder
For the Bowls:
4cupschopped romaine lettuce
2largetomatodiced
For the Burger Sauce
3/4cupavocado mayonnaise
2tbspketchup
2tspyellow mustard1
1tbspwhite vinegar
1/2smallwhite onion finely diced
1/4cuppicklesfinely diced
Instructions
Roast the Sweet Potato:
Preheat the oven to 425 F.
In a large bowl, toss the diced sweet potatoes in olive oil and chili powder.
Spread them out on a baking sheet in a single layer. Roast for about 25-30 minutes, flipping halfway through, until they are tender and slightly crispy.
For the hamburger patties:
While sweet potatoes are roasting, season the ground beef with salt, pepper, garlic powder, and onion powder.
Form the meat into four patties .Heat a skillet over medium-high heat. Add a bit of oil if necessary. Cook the patties for about 3-4 minutes per side, or until they reach your desired level of doneness.
On a cutting board, use a knife to chop up your burger into pieces.
Make the Burger Sauce:
In a small bowl, mix together mayonnaise, ketchup, mustard, vinegar, onion, pickles.
Make the Bowls:
Divide the roasted sweet potatoes between two bowls.
Place the cooked hamburger patties on the sweet potato.
.Add a layer of chopped romaine lettuce and tomato on top of the burger.
Drizzle burger sauce on top of the romaine lettuce.
Notes
If you use prepared hamburgers- it's important to note that not all hamburgers are created equal. Be sure to read labels for list of ingredients. Stick as close to 100% beef as possible without extra fillers and additives. If you are serving more than 2 people- make 1 sweet potato per person and 1 hamburger per person. Use 1 cup of romaine and half a tomato per person. The burger sauce is enough for 4 people to share.
