Indian Spiced Chicken

Equipment

  • oven or BBQ
  • large bowl

Ingredients

  • 4 chicken breasts
  • 1 can unsweetened coconut milk 400 mL can
  • 1 lime juiced + zested or 3 tbsp bottled lime juice
  • 2 cloves garlic minced
  • 1 tbsp ginger grated
  • 1 tbsp ground cumin
  • 1 tbsp curry powder
  • 1 tbsp garam masala
  • 1 tbsp paprika
  • 1 tbsp ground coriander
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper

Instructions

  • In a large bowl, add chicken breasts and all ingredients. Mix together with tongs. Let marinate in the fridge for at least 2 hours to overnight.
  • Cook chicken in the oven or the BBQ until internal temperature reaches 165 F.

Notes

Use 1 chicken breast per person. Spices do not need to be adjusted if you add more chicken. 
Garam masala is an Indian spice that can be found in most grocery stores. If you don't have it, simply omit. 
Substitute lemon juice for lime juice.
