Ingredients
4chicken breasts
1can unsweetened coconut milk400 mL can
1limejuiced + zested or 3 tbsp bottled lime juice
2clovesgarlicminced
1tbspgingergrated
1tbspground cumin
1tbspcurry powder
1tbspgaram masala
1tbsppaprika
1tbspground coriander
1/2tspsea salt
1/4tspblack pepper
Instructions
In a large bowl, add chicken breasts and all ingredients. Mix together with tongs. Let marinate in the fridge for at least 2 hours to overnight.
Cook chicken in the oven or the BBQ until internal temperature reaches 165 F.
Notes
Use 1 chicken breast per person. Spices do not need to be adjusted if you add more chicken. Garam masala is an Indian spice that can be found in most grocery stores. If you don't have it, simply omit. Substitute lemon juice for lime juice.
