Equipment

  • 1 large salad bowl

Ingredients

  • 2 large cucumbers
  • 1/2 cup shelled pistachios
  • 1/2 cup crumbled feta
  • 2 tbsp fresh dill
  • 2 tbsp extra virgin olive oil
  • 1 lemon juiced or 3 tbsp bottled
  • 1/4 tsp black pepper

Instructions

  • Using a cutting board, cut your cucumbers in half first. Slice the cucumbers into small pieces.
  • In a large salad bowl, combine sliced cucumber, pistachios, feta, and dill.
  • In a small bowl, whisk together olive oil, lemon juice, black pepper.
  • Pour dressing over cucumber salad. Mix well using tonges.

Notes

Substitutions:
Sub goat cheese for feta cheese.
Sub apple cider vinegar or lime juice for lemon juice.
