1 large bowl or glass roasting pan
Ingredients
4mediumskinless boneless chicken breasts
1can high quality coconut milk (not beverage)
1tbspsmoked paprika
1limejuiced or 3 tbsp bottled
Instructions
In a small bowl, add coconut milk, smoked paprika, and lime. Stir with a whisk to combine.
Place chicken in a bowl or roasting pan. Pour marinade over top. Cover bowl/pan and refrigerate for 2 hours to overnight.
Remove chicken from the marinade. Cook chicken with your preferred method. GRILL (6-8 minutes /side)PAN-SEAR (5-7 minutes /side) orBAKE (20-25 minutes at 400 degrees F). Use a meat thermometer to check the internal temperature of the chicken. Cook until chicken has reached 165 F/74 C.
