Smoked Paprika & Lime Chicken

Today we're marinating chicken breasts in coconut milk, smoked paprika and lime juice. A very easy dinner idea.

Equipment

  • 1 small bowl
  • 1 Whisk
  • 1 large bowl or glass roasting pan

Ingredients

  • 4 medium skinless boneless chicken breasts
  • 1 can high quality coconut milk (not beverage)
  • 1 tbsp smoked paprika
  • 1 lime juiced or 3 tbsp bottled

Instructions

  • In a small bowl, add coconut milk, smoked paprika, and lime. Stir with a whisk to combine.
  • Place chicken in a bowl or roasting pan. Pour marinade over top. Cover bowl/pan and refrigerate for 2 hours to overnight.
  • Remove chicken from the marinade. Cook chicken with your preferred method.
    GRILL (6-8 minutes /side)
    PAN-SEAR (5-7 minutes /side) or
    BAKE (20-25 minutes at 400 degrees F).
    Use a meat thermometer to check the internal temperature of the chicken. Cook until chicken has reached 165 F/74 C.
  • Serve with your favourite vegetable or salad.

Notes

Substitute regular paprika for smoked paprika.
