A smooth, silky chocolate pudding made from avocados, coconut milk and lightly sweetened with maple syrup.

Equipment

  • small food processor
  • 4 ramekins

Ingredients

  • 1.25 cup unsweetened coconut milk chilled overnight
  • 1 avocado very ripe
  • 1/3 cup cocoa powder
  • 2 tbsp maple syrup

Instructions

  • Put all ingredients in a small food processor. Process until smooth.
  • Divide mixture between 4 ramekins or small pudding bowls.
  • Serve immediately or chill first (recommended).

Notes

Cover and store in the fridge for up to 4 days. 
Use more (or less) sweetener to taste.
Use monk fruit sweetener in place of maple syrup to make it keto.
