Blender Banana Bread

Equipment

  • 1 blender
  • 1 9x5 loaf pan

Ingredients

  • 3 very ripe bananas
  • 3 eggs
  • 1/4 cup honey *omit for less sweet
  • 1/2 cup coconut oil not melted
  • 1 tbsp baking powder
  • 1 tsp baking soda
  • 1/4 tsp sea salt
  • 1 cup almond flour
  • 1/2 cup tapioca starch
  • 1/4 cup chocolate chips or pecan pieces optional

Instructions

  • Preheat the oven to 350 F.
  • Line a loaf pan with parchment paper or grease with coconut oil.
  • Add all the ingredients except the almond flour, tapioca starch and chocolate chips.
  • Blend on high until mixed well.
  • Add flours. Pulse a handful of times to mix in, scraping the sides down a couple times.
  • Pour into your prepared loaf pan. Garnish the top with chocolate chips or pecan pieces.

Notes

Substitutions:
Substitute coconut flour or arrowroot starch for tapioca flour. 
Substitute oat flour or a gluten free flour for almond flour.
