Ingredients

  • 1 cup pourable tahini
  • 1 egg
  • 1/2 cup monk fruit sweetener
  • 1 tsp vanilla
  • 2 cups almond flour
  • 1/2 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/4 tsp cardamom
  • 1/4 tsp ginger
  • 1/2 tsp sea salt
  • 1/4 cup slivered almonds optional

Instructions

  • Preheat oven to 350 F.
  • Line baking sheet with parchment paper.
  • In a large bowl, whisk tahini, egg, sweetener and vanilla.
  • Add almond flour, 1/2 cup at a time, stirring with a wooden spoon to incorporate.
  • Add spices and use wooden spoon to mix in.
  • Use an ice scream scoop to scoop the dough, using your clean hands to roll into nice balls.
  • Place each ball on the prepared sheet with space between each one.
  • Press down with your hand or a fork to flatten.
  • Sprinkle tops with slivered almonds (optional).
  • Bake about 20 minutes. Edges should be lightly browned.
