Grain Free Pumpkin Spice Granola

Equipment

  • 1 large sheet pan
  • 1 large mixing bowl
  • 1 chopping knife

Ingredients

  • 1 cup raw walnuts- roughly chopped
  • 1 cup raw pecans-roughly chopped
  • 1 cup raw almonds- roughly chopped
  • 1 cup unsweetened coconut
  • 1/2 cup raw sunflower seeds
  • 1/2 cup raw pumpkin seeds
  • 1/4 cup pure pumpkin (buy in a can)
  • 2 tbsp chia seeds optional ingredient
  • 2 tbsp coconut oil- melted
  • 2 tbsp monk fruit sweetener sub maple syrup
  • 1 tsp vanilla
  • 1/4 tsp sea salt
  • 1/2 tbsp pumpkin spice sub a mix of cinnamon, nutmeg, ginger

Instructions

  • Preheat the oven to 325 F. Line sheet with parchment paper (optional step).
  • In a large mixing bowl, mix together nuts, coconut, seeds, pumpkin, coconut oil, sweetener, pumpkin spice, vanilla, sea salt.
  • Once mixed, spread evenly on the baking sheet and bake for 30-35 minutes, stirring halfway though, until golden and fragrant.
  • Store in an air-tight jar for up to 2 weeks.
