Equipment

  • 1 standard loaf pan
  • 1 large bowl
  • 1 spatula

Ingredients

  • 2.5 cups almond flour
  • 1/4 cup tapioca starch
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 cup monk fruit sweetener
  • 1 tsp vanilla
  • 4 eggs
  • 6 tbsp fresh lemon juice 2 lemons
  • 1 lemon zest
  • 1/4 cup avocado oil
  • 1/4 cup unsweetened almond milk
  • 2.5 tbsp chia seeds

Instructions

  • Preheat the oven to 350 F.
  • Line a loaf pan with parchment paper.
  • In a large bowl, add all dry ingredients. Mix with spatula.
  • Create a well in the middle of the dry ingredients. Add each wet ingredient then stir with spatula. Add chia seeds in after all ingredients have been mixed together.
  • Bake for 40-45 minutes. The top and edges should be a light golden colour.
