1 standard loaf pan
1 large bowl
1 spatula
- 2.5 cups almond flour
- 1/4 cup tapioca starch
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 cup monk fruit sweetener
- 1 tsp vanilla
- 4 eggs
- 6 tbsp fresh lemon juice 2 lemons
- 1 lemon zest
- 1/4 cup avocado oil
- 1/4 cup unsweetened almond milk
- 2.5 tbsp chia seeds
Preheat the oven to 350 F.
Line a loaf pan with parchment paper.
In a large bowl, add all dry ingredients. Mix with spatula.
Create a well in the middle of the dry ingredients. Add each wet ingredient then stir with spatula. Add chia seeds in after all ingredients have been mixed together.
Bake for 40-45 minutes. The top and edges should be a light golden colour.
