3 mason jars with lids
1 small mixing bowl
Whisk
- 400 ml unsweetened coconut milk I used thai kitchen brand
- 1 tbsp monk fruit sweetener
- 1 tbsp vanilla
- 4 tbsp chia seeds
- 1 lemon (juice +zest)
Whisk all ingredients in a small bowl.
Divide among 3 small mason jars. Secure with lids.
Refrigerate overnight.
Serve alone or garnish with nuts, seeds, unsweetened coconut or fruit.
