Today we're making a Lemon Chia Pudding. This is a simple, no bake recipe that takes less than 2 minutes to assemble ingredients. Tastes like dessert but healthy enough for breakfast. Gluten free, grain free, dairy free, vegan, sugar free.

Equipment

  • 3 mason jars with lids
  • 1 small mixing bowl
  • Whisk

Ingredients

  • 400 ml unsweetened coconut milk I used thai kitchen brand
  • 1 tbsp monk fruit sweetener
  • 1 tbsp vanilla
  • 4 tbsp chia seeds
  • 1 lemon (juice +zest)

Instructions

  • Whisk all ingredients in a small bowl.
  • Divide among 3 small mason jars. Secure with lids.
  • Refrigerate overnight.
  • Serve alone or garnish with nuts, seeds, unsweetened coconut or fruit.
