One Jar Sugar Free Peach Jam

Today I'm making a super easy, one jar, peach jam using fresh or frozen peaches. No sugar added!

Equipment

  • 1 medium pot
  • 1 peeler
  • 1 immersion blender

Ingredients

  • 4 cups fresh or frozen peaches peeled and sliced. *see note below
  • 1/4 cup water
  • 1 lemon juiced or 3 tbsp bottled lemon juice
  • 2 tbsp chia seeds

Instructions

  • Put 4 cups of peeled and sliced peaches in a small pot with 1/4 cup of water. Cook down 7-10 minutes. (7 minutes for fresh peaches or 10 minutes frozen peaches). Peaches should be very soft when pierced with a fork.
  • Use an immersion blender to blend peaches to desired texture.
  • Stir in chia seeds and lemon juice.
  • Allow to cool. Transfer to a mason jar.

Notes

Makes about 1.5 cups of jam. 
**4 cups of peaches is equivalent to about 4-5 large fresh peaches, 7-8 small fresh peaches or a 600 gram bag of frozen peaches.
Add 1 tbsp of maple syrup if you have a sweet tooth. 
Store in a mason jar with a secure lid. Refrigerate up to 2 weeks.
