Equipment
1 medium pot
1 peeler
1 immersion blender
Ingredients
4 cupsfresh or frozen peachespeeled and sliced. *see note below
1/4 cupwater
1lemonjuiced or 3 tbsp bottled lemon juice
2tbspchia seeds
Instructions
Put 4 cups of peeled and sliced peaches in a small pot with 1/4 cup of water. Cook down 7-10 minutes. (7 minutes for fresh peaches or 10 minutes frozen peaches). Peaches should be very soft when pierced with a fork.
Use an immersion blender to blend peaches to desired texture.
Stir in chia seeds and lemon juice.
Allow to cool. Transfer to a mason jar.
Notes
Makes about 1.5 cups of jam. **4 cups of peaches is equivalent to about 4-5 large fresh peaches, 7-8 small fresh peaches or a 600 gram bag of frozen peaches.Add 1 tbsp of maple syrup if you have a sweet tooth. Store in a mason jar with a secure lid. Refrigerate up to 2 weeks.
