1 large bowl
1 large sheet pan
- 1 cup raw pistachios
- 1 cup raw walnuts
- 1 cup raw pecans
- 1 cup unsweetened coconut
- 1 cup raw pumpkin seeds
- 3/4 cup chopped dates
- 1/4 cup white sesame seeds
- 2 tbsp maple syrup
- 2 tbsp avocado or coconut oil
- 1 tsp vanilla
- 1/2 tsp sea salt
Preheat the oven to 350 F.
In a large bowl, add all the ingredients.
Stir with a wooden spoon.
Pour mix onto a large sheet pan and use wooden spoon to spread the granola evenly on the pan.
Roast for 20 -25 minutes. The edges should be lightly browned.
Serve on Greek or coconut yogurt. Serve as a cereal with homemade almond milk.
Substitutions:
Use any type of raw nut. I used pistachios, walnuts and pecans, but chopped hazelnuts, chopped almonds and cashews would also work.
Sub raw sunflower seeds for pumpkin seeds or white sesame seeds.
Sub monk fruit sweetener for maple syrup.
Sub dried figs for dates.
