1 large bowl
1 large sheet pan
Ingredients
1cupraw pistachios
1cupraw walnuts
1cupraw pecans
1cupunsweetened coconut
1cupraw pumpkin seeds
3/4cupchopped dates
1/4cupwhite sesame seeds
2tbspmaple syrup
2tbspavocado or coconut oil
1 tsp vanilla
1/2tspsea salt
Instructions
Preheat the oven to 350 F.
In a large bowl, add all the ingredients.
Stir with a wooden spoon.
Pour mix onto a large sheet pan and use wooden spoon to spread the granola evenly on the pan.
Roast for 20 -25 minutes. The edges should be lightly browned.
Serve on Greek or coconut yogurt. Serve as a cereal with homemade almond milk.
Notes
Substitutions:Use any type of raw nut. I used pistachios, walnuts and pecans, but chopped hazelnuts, chopped almonds and cashews would also work.Sub raw sunflower seeds for pumpkin seeds or white sesame seeds.Sub monk fruit sweetener for maple syrup. Sub dried figs for dates.
