- 1/2 mini watermelon
- 1/4 cup crumbled feta cheese
- 1/4 cup pistachios roughly chopped
- 1/4 cup mint chopped
Prepare the Watermelon: Cut the half mini watermelon into cubes or use a melon baller to scoop out balls. Place the watermelon pieces in a large bowl.
Add Feta and Mint: Crumble the feta cheese over the watermelon. Sprinkle the chopped mint leaves on top.
Chop and Add Pistachios: Roughly chop the pistachios and sprinkle them over the salad.
Serve immediately and enjoy!
Substitute basil for mint.
Optional: drizzle a little olive oil on each piece to elevate the flavour even more.
Substitute dairy free cheese for a plant based, vegan option.
