Ingredients
1/2miniwatermelon
1/4 cupcrumbled feta cheese
1/4 cuppistachiosroughly chopped
1/4cupmintchopped
Instructions
Cut mini watermelon in half. Place watermelon cut side down. Cut 1/4 inch slices, like you're slicing a loaf of bread. For each slice, remove the rind, cutting each piece into either a square or rectangle shape.
Sprinkle each watermelon piece with a little bit of feta, pistachio and mint.
Notes
Substitute basil for mint.Optional: drizzle a little olive oil on each piece to elevate the flavour even more. Substitute dairy free cheese for a plant based, vegan option.
