This salad is so beautiful- full of colour. I have served this salad to company and it always goes over well. People eat way more salad than they usually would because it’s just so darn pretty.  There’s nothing fancy about it- it just looks so appealing in the bowl.

Sometimes people say they don’t eat salad because it’s so boring. I don’t understand. There is nothing boring about THIS salad. And the salad dressing is so good. It’s a simple Italian dressing with a little turmeric added to it for more anti-inflammatory benefits.  Turmeric is a wonderful, natural detoxifier and pain fighter. I always mix the dressing in right before serving or let people add their own dressing. It’s a big salad, so if you know you’re going to have left-overs, add the salad dressing to each individual serving.

This salad is a great way to get alot of veggies in the diet. Studies show that eating lots of fruit and veggies reduces ALL CAUSE mortality. That means fruit and veggies eaters are less likely to die of all causes. Studies also show that fruit and veggie eaters generally feel better about themselves and report less depression. Crazy eh?

Add a protein to this salad to make it a full meal. Add goat cheese or feta or nuts and seeds to further garnish this salad. Sometimes I add hemp seeds or pumpkin seeds which add a nice touch.

How to Store this Colourful Salad with Turmeric Italian Dressing?

Store leftovers in a tight glass container or Ziploc bag. Must be refrigerated. Should be eaten within a 3-4 days. Store extra salad dressing in a mason jar. It can be kept on the counter at room temperature. Consume within 7 days.

Equipment

  • 1 large salad bowl
  • 1 mason jar

Ingredients

  • 4 cups mixed lettuce (romaine, arugula, spinach)
  • 1 cup red cabbage shredded
  • 1 cup cucumber diced
  • 1 orange or red pepper seeded and diced
  • 1 cup chickpeas
  • 1 cup matchstick carrots
  • 1/2 cup radishes diced
  • 1/4 cup extra virgin olive oil
  • 1/4 cup apple cider vinegar
  • 1 tbsp dijon mustard
  • 1 clove garlic minced
  • 1 tsp dried oregano or 1 tbsp fresh
  • 1 tsp dried thyme or 1 tbsp fresh
  • 1/2 tsp ground turmeric
  • 1/4 tsp sea salt
  • 1/4 tsp black pepper

Instructions

  • In a large salad bowl, arrange salad greens on the bottom. Add cabbage, cucumber, chickpeas, pepper, carrots and radishes on top.
  • To make the dressing, add olive oil, vinegar, mustard, garlic, herbs, turmeric, salt and pepper to a mason jar. Secure with a lid and shake.

Notes

Serve with a protein to make it a full meal.

Use any combination of lettuce for the salad. I used 2 cups of romaine, 1 cup arugula, 1 cup spinach but you could use any salad green for this salad.

Substitute avocado oil for olive oil. Do not use canola, sunflower or safflower oil as they are pro-inflammatory and highly processed seed oils.

Substitute fresh herbs for dried herbs if available. 

Add goat or feta cheese on top if desired.
