Chicken is a go to protein any night of the week. It can get kind of boring after awhile if you make the same old recipes and you’ve got to mix it up.
This easy and delicious stuffed chicken is packed with spinach, garlic and feta. Hasselback chicken simply describes the method of cutting slices into the chicken breast without cutting all the way through. I added cherry tomatoes to the casserole dish to add colour and because they paired well with the spinach and feta.
This Hasselback Chicken looks kind of fancy, but is truly easy to make. It only takes 20-25 minutes to cook the chicken.
This recipe is naturally gluten free, grain free, made with whole food, is low carb and keto friendly.

What ingredients do you need?
- 4 skinless/boneless chicken breasts
- 2 cloves garlic minced
- 2 handfuls of spinach
- 1 cup crumbled feta cheese
- 1 cup cherry tomatoes
How to Store Leftover Hasselback Chicken
Store leftover chicken in a glass, airtight container. It should be refrigerated and eaten within 5 days. Reheat on the stove in a frying pan with olive oil over medium heat. Or reheat in the microwave.
Freezes well.
Hasselback Chicken stuffed with Spinach & Feta

Ingredients
- 4 skinless/boneless chicken breasts
- 2 cloves garlic minced
- 2 handfuls of spinach
- 1 cup crumbled feta cheese
- 1 cup cherry tomatoes
- 2 tsp oregano
Instructions

Preheat the oven: to 400 F.

Slice the chicken: Make 4-6 slits on the top of each chicken breast by cutting down 75% being careful not to cut all the way through. Transfer chicken to the casserole dish.

In a frying pan over medium heat, add a little olive oil, and garlic. Stir for 1 minute.

Add spinach and allow to wilt which takes about 2 minutes. Remove from heat.

Stir in crumbled feta.

Fill the chicken: Fill the slits with the spinach/garlic/feta mix.
- Sprinkle the top of chicken with oregano.
- Sprinkle cherry tomatoes in between the chicken breasts.
- Cook for 20-25 minutes in the oven or until chicken is cooked through
