This creamy tomato basil soup is rich, comforting and surprisingly simple to make. Sweet tomatoes, fragrant fresh basil, garlic, onion, and creamy coconut milk blend together into a velvety dairy free soup. 

I used a can of fire-roasted diced tomatoes but any can of diced tomatoes will do. Be sure to use premium coconut milk like Thai Kitchen or Cha’s. Lower quality brands are full of gums and emulsifiers that taste weird and can irritate the gut lining. 

This soup can be ready in 20 minutes- it’s an easy weeknight meal that’s full of fresh flavour. 

This soup is nutrient dense, simple and made with real ingredients you probably already have in your kitchen. Perfect for a cozy lunch, a light dinner or paired with a protein-packed salad.

You will never buy soup from a can again because making soup in your kitchen is so incredibly quick and easy and tastes so much better!

How to Store Leftover Soup

Store leftovers in a glass container with a sealable lid. Keep in refrigerator for up to 7 days. Reheat in microwave.

Equipment

  • 1 large soup pot
  • 1 immersion blender or blender

Ingredients

  • 1 tbsp olive oil sub coconut oil, avocado oil
  • 1 medium sized onion diced
  • 3 cloves garlic minced
  • 1 can diced tomatoes (796 mL can) I love fire-roasted diced tomatoes but any variety will do
  • 1 can coconut milk (400 mL can) use a premium brand like Cha's or Thai Kitchen
  • 1 cup fresh basil leaves roughly chopped

Instructions

  • In a large soup pot, add 1 tbsp olive oil. Add diced onions and garlic. Saute for 5 minutes or less.
  • Add can of diced tomatoes (undrained). Cook on medium heat for about 10 minutes.
  • Stir in can of coconut milk and basil. Cook for another 5 minutes.
  • Use immersion blender to puree the soup. Alternatively, carefully transfer your soup to a blender and process.
  • Add salt and pepper to taste.
