I’ve been making this salad on repeat this summer. This vibrant Curried Cauliflower Salad is packed with wholesome ingredients and bold, fresh flavours.

Cauliflower florets are tossed with chickpeas, sweet green peas, grated carrots, dried currants, scallions and cilantro. The salad is coated in a simple curried vinaigrette that brings everything together.

Sub raisins if you can’t find dried currants. Shopper’s HINT: dried currants are usually in the baking section of the grocery store.

The combination of ingredients creates a balance of savoury and sweet. This salad makes an excellent side dish to any protein or on its own as a satisfying vegetarian meal.

Serve chilled or at room temperature. This salad holds up well in the fridge for a few days.

This Curried Cauliflower Salad is a little different from the standard green salad. It’s fresh, full of healthy ingredients and takes no time to make. If you’re making it ahead, you can chop the ingredients and mix the dressing separately, then combine just before serving.

It’s gluten-free, dairy-free, and plant-based.

How to Store Leftover Curried Cauliflower Salad

This salad holds up well in the fridge for 3 days. Store in an airtight glass container.

Equipment

  • 1 large mixing bowl
  • 1 mason jar

Ingredients

For the Salad

  • 1 medium cauliflower; cut into small florets
  • 1 large carrot; grated
  • 1 cup frozen green peas; thawed
  • 1/4 cup scallions (about 3); white and green parts; diced
  • 1 can chickpeas (540mL); drained and rinsed
  • 1/4 cup dried currants
  • 1/4 cup cilantro; roughly chopped

For the Dressing

  • 1/4 cup olive oil
  • 3 tbsp apple cider vinegar
  • 2 tsp Dijon mustard sub mayonnaise
  • 1/4 tsp sea salt
  • 1/4 tsp black pepper
  • 1 clove garlic; minced

Instructions

  • To make the salad, add all the salad ingredients (cauliflower to cilantro) to a large salad bowl.
  • To make the dressing, add all the salad dressing ingredients to a mason jar. Secure with a lid and shake to combine.
  • Pour the dressing over the salad and mix until dressing evenly covers the salad.
