Roasted Cauliflower served on a skewer with Peanut Sauce is a super easy, and creative appetizer or side dish.  

Roasted cauliflower is served with a tangy and slightly sweet peanut sauce that will be sure to surprise and delight. Peanut butter makes everything taste better doesn’t it?

So easy to make, with simple ingredients. Everybody will ask you for the recipe. This appetizer is healthier, cheaper and much more interesting than the standard boxed variety. 

It is gluten free, grain free, dairy free, keto friendly with a paleo option (see Key Ingredients & Substitutions section).

What equipment do you need

  • 6-10 wooden skewers
  • baking sheet
  • small bowl
  • whisk

What ingredients do you need?

  • 1 medium cauliflower
  • 1/2 cup natural peanut butter
  • 1 tbsp lime juice
  • 1 tbsp tamari sauce
  • 1 tbsp maple syrup
  • 1 tbsp almond milk
  • 1/4 tsp sesame oil
  • 1 clove garlic minced very finely

How do I make this Roasted Cauliflower Appetizer?

It’s EASY!

Step 1: 

Preheat the oven to 350F.

Step 2: 

Chop cauliflower into florets.

Step 3: 

Arrange florets on a baking sheet in a single layer.
Step 4: 
Roast cauliflower about 30 minutes. Cauliflower should have slightly browned edges.
Step 5: 
In a small bowl, add peanut butter, lime juice, tamari, maple syrup, garlic, sesame oil and almond milk. Use a whisk to combine ingredients.
Step 6:
Once cauliflower is roasted allow it to cool enough that it can be handled.
Step 7:
Put 4 florets on each skewer. It’s ok to put the skewered cauliflower back in the oven to heat up again. 
Serve hot.

 

Can you grill cauliflower skewers on the BBQ?

Yes! I have grilled cauliflower skewers directly on the BBQ in the summer. Wooden skewers must be soaked in water for at least 10 minutes first, otherwise they will burn.

Key Ingredients & Substitutions:

  •  Cauliflower -Cauliflower was roasted in the oven before threading on a skewer. It’s easier to put cauliflower on the skewer once the stem has softened a bit. I have also made this recipe by BBQ’ing the cauliflower on the skewers. The wooden skewers must be soaked in water for at least 10 minutes if BBQ cooking method is chosen, otherwise skewers will burn. 
  • Peanut Butter- Natural (runny) peanut butter was chosen for the sauce. Substitute almond butter as a paleo option. Almond butter makes a lovely, rich sauce and the color is a deeper brown. 
  • Tamari Sauce- I used tamari sauce as it is a gluten free soy sauce. Use coconut aminos if you are avoiding soy. Regular soy sauce can also be used for this recipe.

 

  • Maple syrup– Maple syrup was used to slightly sweeten the peanut sauce. Honey would also work.

 

  • Almond milk– I used almond milk to thin the sauce out a bit. Any nut milk or water would be a good substitute.

     

    How to Store this Cauliflower Appetizer

    Store leftover cauliflower in a glass, airtight container. It should be refridgerated and eaten within 2-3 days. Peanut sauce can also be covered with plastic wrap or stored in an airtight container. It also should be refridgerated. 

    Do not freeze this cauliflower appetizer or peanut sauce.

    Notes

    If you cook cauliflower on the BBQ instead of the oven, the skewers must be soaked in cold water for at least 10 minutes.
