This might just be my favourite chicken recipe of all time. There’s a reason it’s called “marry me” chicken. You will literally want to marry it. It’s so very very good. Chicken breasts, with onion, garlic, sundried tomatoes, spinach (or arugula) and fresh basil with a creamy tomato sauce.
I made this recipe twice. Once using cream and parmasean for the sauce. The second time with coconut milk and nutritional yeast. Surprisingly, I preferred the dairy free version. The sauce was just so full of flavour.
I’ve also seen this recipe done with chickpeas instead of chicken. I will try that for our next meatless dinner. If I like it, I’ll post the recipe!
This Marry Me Chicken is quick and easy to make. There is very little prep and you dirty only one pan.
This recipe is naturally gluten free, grain free, made with whole food, dairy free, low carb and paleo friendly.
Serve with roasted cauliflower, cauliflower rice or regular rice.

What equipment do you need?Â
- a dutch oven or large frying pan
- meat thermometre
What ingredients do you need?
- 4 boneless skinless chicken breasts
- 3 cloves garlic minced
- 1 medium onion diced
- 1 tsp oregano
- 4 tbsp tomato paste
- 1.25 cup high quality coconut milk
- 1/2 cup water or broth
- 1 cup sundried tomatoes roughly chopped
- 1/3 cup nutritional yeast see substitutions
- 2 cups fresh arugula or spinach
- 1/2 cup fresh basil optional
- sea salt to taste optional
How to Store Leftover Marry Me Chicken
Store leftover chicken in a glass, airtight container. It should be refrigerated and eaten within 5 days. Reheat on the stove in a frying pan with olive oil over medium heat. Or reheat in the microwave.
Freezes well.

Ingredients
- 4 boneless skinless chicken breasts
- 3 cloves garlic minced
- 1 medium onion diced
- 1 tsp oregano
- 4 tbsp tomato paste
- 1.25 cup high quality coconut milk
- 1/2 cup water or broth
- 1 cup sundried tomatoes roughly chopped
- 1/3 cup nutritional yeast see substitutions
- 2 cups fresh arugula or spinach
- 1/2 cup fresh basil optional
- sea salt to taste optional
Instructions
Sear the Chicken:

In a dutch oven or large frying pan, heat olive oil over medium heat. Sear the chicken breasts until golden on both sides (4-6 minutes). Remove chicken and set aside.
Make the Sauce:

In the same pan, add the onions and saute 3-4 minutes or until translucent.

Add garlic and saute for an additional 30 seconds. Stir in the oregano.

Add the tomato paste. Stir in.

Pour in the coconut milk and the water/broth. Bring to a simmer, stirring occasionally.
Add Sun-Dried Tomatoes

Stir in the chopped sun-dried tomatoes and simmer for 5 minutes and let the sauce thicken.
Return the chicken to the pan

Add the chicken back to the pan, coating it with sauce.

Stir in nutrtitional yeast and arugula.

Check the internal temperature of the chicken with a meat thermometer. The chicken is fully cooked and safe to eat when the internal temperature is 165 F (75 C)
