Cottage cheese is having a moment right now. Have you tried this viral cottage cheese ice cream yet? I had to stop everything and make it. It’s surprisingly good. It’s not as good as real ice cream, but I still thinks it’s an excellent treat. Three simple ingredients. Cottage cheese, fruit and maple syrup.
I made my ice cream with strawberries, but I also made it again with raspberries, which was very yummy. This is a really easy dessert that blends together in a minute. It must be frozen for 2-3 hours first before eating. It’s hard to believe that it’s made with cottage cheese, because it doesn’t taste like cottage cheese at all.
I used a food processor to blend all ingredients but I’ve seen it done with a high speed blender or immersion blender. That seemed to work well too. And you don’t need an ice cream maker, simply freeze your ice cream in a loaf pan.
I found that 2-3 hours of freezing was perfect. More than that and my ice cream was super hard. If your ice cream is hard, let it sit at room temperature for 30 minutes before attempting to dish it out.

How to Store this Cottage Cheese & Fruit Ice Cream?
Store leftover ice cream in the freezer in the loaf pan that you made it in. Cover with plastic wrap.
Cottage Cheese & Fruit Ice Cream
Equipment
- 1 food processor or high speed blender
- 1 loaf pan
Ingredients
- 500 grams cottage cheese
- 1/4 cup maple syrup
- 1.5 cup fresh or frozen sliced strawberries
Instructions
- In a food processor, add cottage cheese, maple syrup and 1 cup of fruit.
- Process until smooth.
- Pour mixture into a loaf pan. Sprinkle top with remaining 1/2 cup of fruit.
- Freeze for 3 hours.
