Chicken salad is a tried and true old-school recipe. This is a modern version with creamy mayo, crisp celery, slivered almonds, aromatic curry powder and fresh herbs. Delish! It’s super easy, quick to make and tastes really good. Eating healthy doesn’t have to take a lot of time. You just have to have a plan.

I prepared the chicken breasts in the air fryer because it was hot out and I didn’t want to heat up my house by using the oven. If you don’t have an air fryer, that’s ok. You can still make this recipe. Cook chicken in the oven, then dice it up into chunks. Or saute chicken in a pan on the stove. That works too.

Add raisins or currants if you want a little extra texture. If you don’t like curry, substitute dijon mustard instead.

Eat your chicken salad on a salad, on romaine or boston lettuce leaves or gluten free bread or wrap.

Store leftovers in a tight glass container. Must be refrigerated. Should be eaten within a 5 days. 

 


Air Fryer Curried Chicken Salad

Today we're making curried chicken salad with celery, parsley, slivered almonds, mayo and lime juice. I cooked the chicken in the air fryer but use any method you prefer to cook the chicken.

Equipment

  • air fryer or oven/stovetop/BBQ
  • 1 Medium bowl

Ingredients

  • 2 chicken breasts diced into bite sized pieces
  • 1 tbsp curry powder
  • 3 tbsp lime juice 1 lime
  • 1/3 cup + 2 tbsp avocado mayonnaise
  • 1/4 cup parsley
  • 1 celery stalk diced
  • 1/4 cup slivered almonds

Instructions

  • If using air fryer, spray basket with a bit of avocado spray or lightly grease with avocado or olive oil.
  • Cook chicken in air fryer for 15-17 minutes, stirring occasionally.
  • Once chicken is cooked, let it cool a little bit.
  • In a medium bowl, add cooked chicken and all ingredients. Mix with tongs or a large spoon.

Notes

Cook chicken using any method you prefer (air fryer, oven, BBQ).  Chicken is done when internal temperature reaches 165 F. 
Substitute lemon juice for lime juice.
Substitute regular or olive oil mayonnaise for avocado mayo.
Add 1/4 cup golden raisins or dried currants for extra texture if you like.
