Have you ever made a mug cake before? If not, you should. They are so good and easy to make. If you have a hankering for a baked good but don’t want to go to the trouble of baking an entire cake (or going to the store), mug cakes are an easy solution.
If you’re not familiar with the mug cake, it is a single serving cake, made in a large coffee mug and cooked in the microwave. There are endless combinations of mug cakes.
My mug cake, of course, will be healthier than your standard mug cake. I made my mug cake gluten free with less sugar than mug cakes you might find on Pinterest. The mug cake I chose to make today is made with a very ripe banana, almond flour, an egg and just a tablespoon of chocolate chips.
All you do is mash a banana in a large coffee mug, mix in the other ingredients, stir and put it in the microwave for 90 seconds.
Simply omit chocolate chips for a refined sugar free mug cake. Use GF oat flour for nut free option.
This banana mug cake will allow you to enjoy a baked good when you are craving something quick, without the mess, and without all the white flour and sugars typically found in store-bought baked cakes.
This mug cake is naturally gluten free, dairy free, low in refined sugars and is paleo friendly.

How to Store leftover 90 second Banana Mug Cake
It’s unlikely you’ll have any leftovers here since this is a single serving dish. But if you can’t eat it all at once, simply cover with plastic wrap and store in the fridge. To warm up, remove plastic wrap and microwave for 15-20 seconds.
90 Second Banana Mug Cake (Single Serving)
Equipment
- 1 large, microwave safe mug
- 1 microwave
- 1 fork
Ingredients
- 1 medium very ripe banana
- 1 egg
- 3 tbsp almond flour
- 1 tbsp dark chocolate chips
Instructions
- In a large, microwave safe mug, add ripe banana and mash with a fork.
- Add the egg and almond flour, stirring to mix with the same fork you used to mash the banana.
- Add chocolate chips and stir into the mixture.
- Microwave for 90 seconds.
- Enjoy! Serve warm for best taste.
