Today, I am making a beautiful appetizer using watermelon as the base and garnishing with feta cheese, pistachios and mint. So simple, yet very elegant. It will delight even the fussiest of foodies. It has become my favourite summer appetizer this year.

It’s super easy to make and there is no cooking required. Simply slice the watermelon in thin rectangular (or square) pieces and garnish with the toppings. That’s it! You’re done. I love appetizers like this one.  

This watermelon appetizer is naturally gluten free, and has no refined sugars. Simply omit cheese or use dairy free cheese for a plant based/vegan option.

How to Store this Watermelon with Feta Mint & Pistachio 

Watermelon doesn’t keep well. But if you have leftovers, store watermelon on a plate covered with plastic wrap or in a glass container. Must be kept in the fridge. Should be eaten within a day or two at most. Do not freeze. 

 

 

Watermelon with Feta Pistachio and Mint

Today we're making this very simple, yet very elegant watermelon slices garnished with feta cheese, pistachios and mint. The perfect summer appetizer.

Equipment

  • 1 serving plate

Ingredients

  • 1/2 mini watermelon
  • 1/4 cup crumbled feta cheese
  • 1/4 cup pistachios roughly chopped
  • 1/4 cup mint chopped

Instructions

  • Cut mini watermelon in half. Place watermelon cut side down. Cut 1/4 inch slices, like you're slicing a loaf of bread. For each slice, remove the rind, cutting each piece into either a square or rectangle shape.
  • Sprinkle each watermelon piece with a little bit of feta, pistachio and mint.

Notes

Substitute basil for mint.
Optional: drizzle a little olive oil on each piece to elevate the flavour even more. 
Substitute dairy free cheese for a plant based, vegan option.
