If you love the taste of Chinese food, this Deconstructed Egg Roll in a Bowl will quickly become a favourite. This one skillet meal is perfect for a weeknight, when you feel like take-out, but you know you should eat healthy and cook at home.

It literally takes minutes to make this and it’s so much better for you.

All the flavours of Chinese food (think deep fried egg roll), minus the MSG, gluten and not-so-good for you oils that go hand in hand with take-out. Sauteed ground pork (you could use ground beef, chicken or turkey), with ginger, tamari sauce (a GF soy sauce-you could use regular soy sauce too), shredded cabbage, carrots, peas, green onions with eggs scrambled in. I used the pre-shredded cabbage in a bag that’s meant to make coleslaw. It’s perfect time saving kitchen hack. 

This is one of the tastiest meals ever. It could feed 4 people. But it’s so good that you’ll likely want seconds.

How to Store left over Egg Roll in A Bowl

Store leftovers in a tight glass container. Must be refrigerated. Eat within 5 days. Don’t freeze.

Equipment

  • 1 small bowl
  • 1 Frying pan
  • 1 wooden spoon

Ingredients

  • 2 eggs
  • 1 tbsp oil (avocado or olive)
  • 500 grams ground pork
  • 1 bag raw coleslaw (397 g) or 4-6 cups shredded cabbage
  • 1 cup matchstick carrots or 1 grated carrot
  • 1 cup frozen peas
  • 1 tbsp ginger grated or minced
  • 2 tbsp tamari sauce or GF soy sauce
  • 3 green onions chopped; use both white and green parts

Instructions

  • In a small bowl, add eggs. Stir with a fork. Set aside.
  • In a frying pan, add 1 tbsp oil over medium heat. Add ground pork. Break up with a wooden spoon and cook until browned.
  • Add ginger and tamari sauce. Stir in with wooden spoon.
  • Add coleslaw, carrots and frozen peas. Cook down about 5 minutes.
  • Create a well in the middle of your pan. Pour eggs in. Once they begin to set, use your wooden spoon to scramble eggs. Once eggs are scrambled to your liking mix into the rest.
  • Garnish with green onions. Serve hot.
  • Notes:

Substitute ground turkey, chicken,or beef for pork.
