People find it difficult to give up bread when cutting back on refined carbohydrate. I get it- it’s hard. There is something so comforting about eating bread. It helps to have an easy low carb “bread” recipe to fall back on. 

This 90 second FLAX  BREAD is a great way to replace traditional bread when looking for alternatives. It’s quick to make and has only 3 simple ingredients (ground flax, egg and baking powder- everything bagel spice is an optional ingredient). I offer substitutions below for everything bagel spice. 

It’s also great if you want a piece of “bread” NOW but don’t want to take an hour to whip up a loaf.

This flax bread is great because it tastes good and it’s customizable.  Add herbs and spices to the bread and try different toppings – swap everything bagel spice for white sesame seeds or parmesan cheese. Top your bread with peanut butter and jam (try my One Jar No Sugar Peach Jam or my 3 ingredient No sugar Berry Jam), mashed avocado, just butter or a slice of smoked salmon or cheese. I often toast my piece of bread after letting it cool for an even better tasting piece of bread.

Did I mention that this “bread” is nut free? Many quick 90 second low carb bread recipes contain almonds which don’t work for everybody.

How to Store this Flax Seed Bread 

Store flax bread in an airtight container or ziploc bag. It’s ok on the counter for 1 day but after that it should be stored in the fridge for up to 1 week. 

Freezes well.

Equipment

  • 1 microwave safe glass dish I used a square 6×6 inch Pyrex glass dish

Ingredients

  • 4 tbsp ground flaxseed
  • 1 egg
  • 1/4 tsp baking powder
  • 1/2 tsp everything bagel spice sprinkled on top (OPTIONAL)

Instructions

  • Add ground flax, baking powder and egg to the glass dish.
  • Stir to mix ingredients together.
  • Sprinkle the top with everything bagel spice (if using).
  • Microwave for 90 seconds. Use a fork to pop the flax bread out of the dish.

Notes

If you don’t have Everything Bagel Spice substitute sesame seeds (white and black-if you have both) and a little sea salt. Experiment with different seasonings (herbs, spices, parmesan).
