It only takes 2 minutes to make a healthy, delicious single serving apple crisp in a mug. Lately, I’ve been making this recipe on repeat. Fall apples are just so good!

This apple crisp is made with no grains, to keep inflammation down. It’s made with one apple, unsweetened coconut, pumpkin seeds, pecans, cinnamon and a touch of maple syrup. It  will quickly become your favourite fall recipe.

If you’re trying to eat healthier or naturally trying to lower inflammation, but still want the occasional treat, try this 2 minute Mug Apple Crisp. So much better and healthier than any store bought snack.

If you don’t like the idea of making your crisp in the microwave, you can make it in the oven. Bake your apple crisp in an oven safe ramekin for 10-12 min in a 375 F oven.

This mug apple crisp is made from simple ingredients and take less than 2 minutes to make. Quick and easy!

What equipment do you need?

  • 1 large microwave safe mug (or bowl)

What ingredients do you need?

  • 1 medium to large sized apple I used Honeycrisp
  • 1/2 tsp arrowroot starch
  • 1/2 tsp lemon juice
  • 2 tbsp unsweetened coconut
  • 2 tbsp raw unsalted pumpkin seeds
  • 2 tbsp raw pecan pieces
  • 1/2 tsp cinnamon or pumpkin spice
  • 1 tbsp water
  • 1 tbsp maple syrup

How do I make this 2 minute Mug Apple Crisp ??

Step 1:

Peel, core and chop an apple into bite sized pieces.

Step 2:

To a microwave safe mug or bowl, add apples, arrowroot starch, lemon juice.

Step 3:

Microwave for 1 minute.

Step 4:

Carefully remove the mug from the microwave.
Step 5:
Add coconut, pumpkin seeds, pecans, cinnamon, water, maple syrup.
Step 6: 
Return to the microwave and cook for 1 minute.
Step 7:
Carefully remove the mug from the microwave. Stir contents of mug with a spoon. Allow a couple minutes to cool before consuming.
Step 8: 
If your apple isn’t quite cooked through, add to microwave for 30 more seconds. Repeat if necessary.

 

How to Store this 2 minute mug Apple Crisp 

Simply cover your mug with plastic wrap and keep it in the fridge. If you avoid plastic wrap, transfer your crisp to a glass container.

Notes

 

Substitute GF oats for unsweetened coconut (however, it will no longer be grain free)                             Recipe will work without arrowroot starch.
