An omelette is a good choice for breakfast, lunch or dinner!
An omelette is quick and easy to make. It takes less than 5 minutes to cook an omelette on the stove. Plus, they’re inexpensive to make and the eggs are a good source of protein. You can add a variety of veggies, cheeses or herbs to suit your preferences. It’s a light meal that doesn’t weigh you down, but still provides lasting energy. The options are endless really.
Today, I’m sharing an Indian Spiced Omelette recipe. This omelette is super good and a vibrant twist on a classic. This omelette is filled with spinach, onion, tomato, and earthy spices (ground cumin and coriander, cinnamon), S&P, and cheese (omit for dairy free). This omelette is flavourful, satisfying and nutritious any time of day.
This recipe is naturally gluten free, grain free, made with whole food, low carb, and keto. Omit cheese to make it paleo or dairy free.
Serve alone or with salsa, guacomole or sour cream.

What ingredients do you need?
- 3 eggs
- 1/4 cup spinach
- 1/2 shallot finely diced
- 1/2 small tomato finely diced
- 1/4 tsp ground cumin
- 1/4 tsp ground coriander
- 1/4 tsp sea salt
- 1/4 tsp black pepper
- 1/8 tsp cinnamon
How to Store Leftover Omelette
An omelette is best eaten immediately after cooking. I’ve never tried to save and store leftover omelette. So I asked Chat GPT what to do if I have leftover omelette and it says that an omelette will keep 2-3 days in a glass, airtight container. Keep refrigerated. It won’t be as fresh, but if heated up it should still be tasty.
Don’t freeze.

Ingredients
- 3 eggs
- 1/4 cup spinach
- 1/2 shallot finely diced
- 1/2 small tomato finely diced
- 1/4 tsp ground cumin
- 1/4 tsp ground coriander
- 1/4 tsp sea salt
- 1/4 tsp black pepper
- 1/8 tsp cinnamon
Instructions

In a small bowl, add the eggs and use a whisk to beat them.

Heat a frying pan over medium heat and add a touch of oil. Swirl it around to coat the bottom evenly.

Pour the egg mixture into the pan. Let it sit undisturbed for about 30 seconds so the edges start to set.

Once the eggs are mostly set but still a little runny on top, sprinkle your fillings over one half of the omelette.

Use the spatula to gently fold the omelette in half over the fillings. Let it cook for another couple minutes, just enough to melt the cheese and finish setting the eggs. Total cooking time 3-5 minutes depending of how soft or firm you like your omelette.

Serve with your favorite sides ie. salsa, sour cream.
Notes
Substitutions:
Substitute 2 tbsp white or red onion for shallot.
Substitute chopped parsley, basil or other green herb for spinach.
Substitute 1/2 a jalapeno for spinach if you like a little extra spice.
Omit cheese for dairy free.
