POV: Don’t eat store bought granola. It’s FULL of sugar, contains bad fats and refined carbohydrates. I’ve never seen a healthy granola sold in a grocery store. If you find one, let me know. I’m interested! Even if the label says that it’s healthy, don’t trust it.
The good news is that healthy, mouth watering granola is super easy to make at home. My recipe is made with nuts, seeds and unsweetened coconut. It contains good fats from coconuts, has no refined carbohydrates and no sugar. I added pumpkin spice for flavor because ’tis the season for pumpkin spice! Substitute with cinnamon if you don’t have pumpkin spice. Substitute 1 tbsp maple syrup for monk fruit sweetener if you don’t have it. Serve granola on Greek yogurt or put it in a bowl like cereal and pour almond milk on top.

What do you need for this Pumpkin Spice Granola recipe:
- 1 cup walnuts roughly chopped
- 1 cup pecans roughly chopped
- 1 cup almonds roughly chopped
- 1 cup unsweetened coconut
- 1/2 cup raw sunflower seeds
- 1/2 cup raw pumpkin seeds
- 1 tsp pumpkin spice
- 1 tbsp monk fruit sweetener or maple syrup
- 1 tsp vanilla
- 1/4 tsp sea salt
- 1/4 cup coconut oil melted
How to Store this Pumpkin Spice Granola
Store granola in a large mouth mason jar or glass container with a secure lid. Can be left on the counter for 5 days. After that, I would refrigerate. Do not freeze.

Ingredients
- 1 cup walnuts roughly chopped
- 1 cup pecans roughly chopped
- 1 cup almonds roughly chopped
- 1 cup unsweetened coconut
- 1/2 cup raw sunflower seeds
- 1/2 cup raw pumpkin seeds
- 1 tsp pumpkin spice
- 1 tbsp monk fruit sweetener or maple syrup

- 1/4 tsp sea salt
- 1/4 cup coconut oil melted
Instructions

Preheat the oven to 325 F.

In a large bowl, add all the ingredients. Stir with a wooden spoon to mix well.

Spread granola out on to a large baking sheet.

Bake about 20 minutes. The edges should look lightly roasted.
Notes
Serve on greek yogurt or like a cereal with almond milk.
