This Cucumber Feta & Dill Salad is fresh and takes no time to make. It’s made with Persian cumbers (mini cucumbers) or a regular cucumber, feta cheese, fresh dill and a simple olive oil red wine vinegar dressing. This salad is a little bit crunchy, a little bit creamy and salty with an herby freshness.
This simple salad is light, bright, healthy and full of good-for-you ingredients.
Gluten free, grain free, nut free, with dairy free option (simply omit cheese or use dairy free cheese).

How to Store Leftover Cucumber Feta & Dill Salad
Store leftover salad in an airtight glass containers. Refrigerate. Eat within 5 days.
Do not freeze.

1 Medium bowl
Ingredients
- 2 cups Persian or English cucumber sliced; about 6-8 Persian cucumbers
- 1/2 cup feta cheese crumbled
- 1/4 cup fresh dill chopped
- 2 tbsp olive oil
- 2 tbsp red wine vinegar
- 1/4 tsp sea salt & pepper
Instructions

Toss the sliced cucumber, feta and dill in a bowl.

Drizzle olive oil and red wine vinegar. Add salt and pepper. Toss gently until combined.
