Today, I am making a beautiful watermelon salad. Cubed watermelon garnished with feta cheese, pistachios and mint. So simple, yet very elegant. It will delight even the fussiest of foodies. Serve it as a healthy dessert.
It’s super easy to make and there is no cooking required. Simply cube (or use a melon baller to make balls) the watermelon and garnish with the toppings. That’s it! You’re done. I love salads/(desserts!) like this one.
This watermelon salad is naturally gluten free, and has no refined sugars. Simply omit cheese or use dairy free cheese for a plant based/vegan option.
Drizzle with high quality olive oil if you like which really brings out the flavours.

How to Store this Watermelon Salad with Feta Mint & Pistachios
This salad tastes best when eaten the same day of preparation. Watermelon doesn’t keep well. But if you have leftovers, cover bowl with plastic wrap or store in a glass container. Must be kept in the fridge. Should be eaten within a day or two at most. Do not freeze.
Watermelon Salad with Feta Pistachio and Mint

1 large bowl
Ingredients
- 1/2 mini watermelon
- 1/4 cup crumbled feta cheese
- 1/4 cup pistachios roughly chopped
- 1/4 cup mint chopped
Instructions

Prepare the Watermelon: Cut the half mini watermelon into cubes or use a melon baller to scoop out balls. Place the watermelon pieces in a large bowl.

Add Feta and Mint: Crumble the feta cheese over the watermelon. Sprinkle the chopped mint leaves on top.

Chop and Add Pistachios: Roughly chop the pistachios and sprinkle them over the salad.

Serve immediately and enjoy!
Notes
Optional: drizzle a little olive oil on each piece to elevate the flavour even more.
Substitute dairy free cheese for a plant based, vegan option.
