If you’ve got a few spotty bananas on the counter, this is the loaf to make. It’s moist and tender, and it’s packed with cinnamon and crunchy walnuts. It’s also made without wheat flour or added sugar. The almond flour gives it a rich, nutty base, and the ripe bananas do all the sweetening on their own.

It comes together in one bowl, with ingredients you probably already have, and it bakes up into about 12 generous slices. It’s lovely warm with a little butter, and it holds up well for breakfast on the go or an afternoon snack with tea.

Store-bought banana bread is often more dessert than breakfast. Commercial brands have (at least) 25 – 45 grams of sugar in one slice. That’s roughly 7 to 10 teaspoons of sugar in a single slice, along with refined white flour (which breaks down into glucose almost as fast as table sugar) . This loaf has about 6 grams of (unrefined) sugar per slice, all from the bananas. The almond flour and walnuts add protein, fiber and healthy fats, so a slice is more filling.

Homemade banana bread also no fillers or preservatives compared to factory made.

How to Store this Banana Bread

Store banana bread in an airtight glass container or ziplock bag. It is ok on the counter for a day or so, but after that it should be refrigerated.  Should be eaten within 5-7 days. Freezes well.
