Today, I am marinating chicken in unsweetened coconut milk, lime juice and a TON of spices. This chicken has alot of flavour and is super nutrient dense. Having chicken every week can get a little boring, so why not mix it up! The spice mix here includes cumin, coriander, curry, garam masala and paprika.
Indian spices are loaded with nutrition and are the most nutritious spices on the planet. They have potent anti-inflammatory and anti-oxidant properties that help decrease inflammation and support good heart and brain health.
There is very little work in making this recipe, but you do need a little marinating time for maximum flavour.

How to Store left over Indian Spiced Chicken
Store leftovers in a tight glass container. Must be refrigerated. Eat within 5 days.
Indian Spiced Chicken

Ingredients
- 4 chicken breasts
- 1 can unsweetened coconut milk 400 mL can
- 1 lime juiced + zested or 3 tbsp bottled lime juice
- 2 cloves garlic minced
- 1 tbsp ginger grated
- 1 tbsp ground cumin
- 1 tbsp curry powder
- 1 tbsp garam masala
- 1 tbsp paprika
- 1 tbsp ground coriander
- 1/2 tsp sea salt
- 1/4 tsp black pepper
Instructions

In a large bowl, add chicken breasts and all ingredients. Mix together with tongs. Let marinate in the fridge for at least 2 hours to overnight.

Cook chicken in the oven or the BBQ until internal temperature reaches 165 F.
Notes
Garam masala is an Indian spice that can be found in most grocery stores. If you don’t have it, simply omit.
Substitute lemon juice for lime juice.
