 Today, I am making super delicious no bake Carrot Cake Balls. They are an easy, 2 bite snack made from nut butter, grated carrot, unsweetened coconut and sweetened with a little honey. You can use monk fruit sweetener for a sugar free option. 

I love having healthy grab and go options around for when I need some fuel and I’m short on time (which is always!). When I’m working, I’m with patients and when I’m not working I’m usually running kids around town, so I don’t always have time to sit down and eat. I don’t want to eat processed packaged snacks, so it helps to have my own homemade snacks ready to go. These no bake carrot cake balls are perfect for making when I have a little extra time on the weekend or in the evenings. I keep them in the fridge or the freezer for an energy boost when I need it most. 

I love this recipe because there’s no flour, oats or refined sugar in these balls. Whole grain oats certainly have nutritional value, they just seem to stimulate hunger for me.  I also love that they only take 5 minutes to make.  

Unsweetened coconut is high in fat, but the good, healthy kind of fats that everybody needs. Coconut is also low in carbs but high in fibre. Coconut has been shown to promote good blood sugar control, they contain powerful anti-oxidants and also have beneficial antbacterial effects. There’s no guilt in eating this snack. Be sure to buy unsweetened coconut flakes because sweetened cococnut flakes are full of refined sugars!

If you want to eat healthy you must make it yourself. The food industry does not consider your health a priority. It is more important that the food tastes good.

How to Store these No Bake Carrot Cake Balls

Store carrot cake balls in an airtight glass container or ziplock bag. It is ok on the counter for a couple days but after that it should be refrigerated.  Should be eaten within 5-7 days. Freezes well.

Equipment

  • 1 Medium bowl
  • 1 wooden spoon

Ingredients

  • 1/2 cup natural peanut butter
  • 1 cup unsweetened coconut divided
  • 1 medium carrot grated
  • 1/4 cup honey
  • 1 tsp cinnamon
  • 1 tsp vanilla

Instructions

  • In a medium bowl, add peanut butter, 1/2 cup of coconut, grated carrot, honey, cinnamon and vanilla. Stir using a wooden spoon.
  • Put other 1/2 unsweetened coconut in a bowl.
  • Using a cookie scoop, scoop out about 2 tbsp of the mixture and roll into a ball.
  • Roll ball in coconut to coat. Repeat with each ball.
  • Refrigerate at least 20 minutes. Serve cold.

Notes

Sugar free option: use monk fruit sweetener instead of honey.

Add 1/4 cup of chopped pecans or walnuts (optional). 

Substitute pumpkin pie spice instead of cinnamon. 

Store in an airtight container in the fridge (for 1 week) or freezer (6 weeks).
