Blackberry Basil Pecan & Goat Cheese Salad

This big salad for one, sounds fancy but it really has very simple ingredients. It begins on a bed of greens (I used spinach, romaine, and arugla) topped with fresh blackberries, pecans, basil leaves and goat cheese. A lemon vinaigrette brings all the flavours together . This salad comes together in less than 10 minutes.  And it’s very easy to simply add more ingredients if you are serving more people. 

Serve this salad with a protein to be a full meal.

How to Store this Blackberry Pecan Basil Salad?

Equipment

  • 1 small mason jar

Ingredients

For the Salad

  • 1 cup romaine lettuce
  • 1/2 cup spinach
  • 1/2 cup arugula
  • 5 basil leaves shredded
  • 3 tbsp goat cheese crumbled
  • 3 tbsp pecans

For the Salad Dressing

  • 2 tbsp olive oil
  • 1 tbsp apple cider vinegar
  • 1 tsp honey or maple syrup
  • 1 tsp dijon mustard
  • 1/2 tbsp lemon juice

Instructions

To make the salad dressing

  • Add salad dressing ingredients to the small mason jar. Secure with a lid and shake to mix well.

To make the salad

  • On a plate or salad bowl add romaine, spinach, arugula. Top with basil leaves, goat cheese and blackberries.
  • Pour salad dressing over the salad just before eating.

Notes

Substitute more romaine lettuce or spinach for arugula. 

Substitute walnuts for pecans.
