POV: Don’t eat store bought granola. It’s FULL of sugar, contains bad fats and refined carbohydrates. I’ve never seen a healthy granola sold in a grocery store. If you find one, let me know. I’m interested! Even if the label says that it’s healthy, don’t trust it.

The good news is that healthy, mouth watering granola is super easy to make at home. My recipe is made with nuts, seeds and unsweetened coconut. It contains good fats from coconuts, has no grains and no added sugar. The sweetness in this recipe comes from the dried cranberries. So while this recipe is not completely sugar free, it is low in refined sugars.  After years of searching, I have not been able to find a sugar free dried cranberry. I tried making my own, but they were not edible, so until I find a good substitute, store bought dried cranberries it is! 

Serve granola on Greek yogurt or put it in a bowl like cereal and pour almond milk on top. I can’t wait for you to try it!

This granola is naturally gluten free, grain free, dairy free, and plant based.

What do you need for this Cranberry Granola recipe:

    • 1 cup walnuts roughly chopped
    • 1 cup pecans roughly chopped
    • 1 cup hazelnut or almonds roughly chopped
    • 1 cup unsweetened coconut
    • 1 cup dried cranberries
    • 1/2 cup raw sunflower seeds
    • 1/2 cup raw pumpkin seeds
    • 1 tsp cinnamon
    • 1 tsp vanilla
    • 1/4 tsp sea salt
    • 1/4 cup coconut oil melted

 

How to Store this Cranberry Granola

Store granola in a large mouth mason jar or glass container with a secure lid. Can be left on the counter for 5 days. After that, I would refrigerate. Do not freeze.

Cranberry Granola

Equipment

  • 1 large sheet pan
  • 1 large mixing bowl

Ingredients

  • 1 cup raw walnuts roughly chopped
  • 1 cup raw pecans roughly chopped
  • 1 cup raw hazelnuts (or almonds) roughly chopped
  • 1 cup unsweetened coconut flakes
  • 1 cup dried cranberries
  • 1/2 cup raw pumpkin seeds
  • 1/2 cup raw sunflower seeds
  • 1/4 cup coconut oil melted
  • 1 tsp vanilla
  • 1 tsp cinnamon
  • 1/4 tsp sea salt

Instructions

  • Preheat the oven to 325 F.
  • In a large mixing bowl, add all ingredients and stir with a wooden spoon.
  • Transfer to a large baking sheet and spread the mixture evenly on the pan.
  • Bake about 17-20 minutes. Granola should look toasted around the edges.

Notes

Makes about 6 cups of granola. 

Substitute avocado oil for coconut oil. Don’t use olive oil as it easily burns.
