This is an easy, budget-friendly dinner idea that comes together in minutes. Ground beef, onion and cabbage stir-fried in a skillet with ginger, garlic, and grated carrots.  Great for when you have lots of cabbage to use up or don’t have a lot of time. Don’t like chopping cabbage? Buy a bag of raw coleslaw and use that. Healthy and delicious. Gluten and grain free, dairy free, low carb, with soy free option.

Equipment

  • 1 Frying pan
  • 1 wooden spoon

Ingredients

  • 1 tbsp olive oil
  • 1 white onion diced
  • 500 grams ground beef
  • 1 tbsp grated ginger
  • 2 cloves garlic minced
  • 1 cup matchstick or grated carrots
  • 4 cups shredded cabbage
  • 3 tbsp coconut aminos, tamari or GF soy sauce (coconut aminos has the least sodium)
  • 2 tbsp sesame oil
  • 2 green onions (scallions) white and green parts sliced

Instructions

  • Over medium heat, add 1 tbsp olive oil. Saute onion about 2 minutes.
  • Add ginger and garlic. Saute 1 minute.
  • Add ground beef and cook until browned. About 5-7 minutes.
  • Add carrots and cabbage. Saute until it's tender.
  • Stir in tamari sauce, sesame oil.
  • Garnish with green onions.

Notes

Substitute raw coleslaw in a bag in place of shredded cabbage.
