I can’t take credit for this salad. My 13 year old daughter Ali (who is very talented in the kitchen BTW) made this salad one day recently and I had to steal the recipe from her! It was so good. This salad is a little bit crunchy, a little bit creamy and salty with an herby freshness. She was happy to share the recipe with you.
This Cucumber Salad with Pistachios Feta & Dill Salad is so fresh and takes no time to make. It’s made with English cucumbers, pistachios, feta cheese, fresh dill and a simple lemon vinaigrette dressing. The pistachios are my favourite part.
This simple salad is light, bright, and full of healthy ingredients.

How to Store Leftover Cucumber Salad with Pistachios, Feta & Dill Salad
Store leftover salad in an airtight glass containers. Refrigerate. Eat within 5 days.
Do not freeze.
Cucumber Pistachio Feta & Dill Salad

1 large salad bowl
Ingredients
- 2 large cucumbers
- 1/2 cup shelled pistachios
- 1/2 cup crumbled feta
- 2 tbsp fresh dill
- 2 tbsp extra virgin olive oil
- 1 lemon juiced or 3 tbsp bottled
- 1/4 tsp black pepper
Instructions

Using a cutting board, cut your cucumbers in half first. Slice the cucumbers into small pieces.

In a large salad bowl, combine sliced cucumber, pistachios, feta, and dill.

In a small bowl, whisk together olive oil, lemon juice, black pepper.

Pour dressing over cucumber salad. Mix well using tonges.
Notes
Sub goat cheese for feta cheese.
Sub apple cider vinegar or lime juice for lemon juice.
