Don’t throw out the pickle juice after the pickles are all gone! It has tremendous flavour that can be used for other recipes. You may have seen my Dill Pickle Hummus recipe that I made recently using leftover pickle juice and dill pickles to add flavour to a classic (but kind of plain) recipe. A quick Pinterest search will reveal that you can make marinades, potato salad, dirty martini’s, deviled eggs and other dishes using leftover pickle juice. Today, we’re using leftover pickle juice to make a salad dressing.
It only takes a minute to make this simple yet delicious, Pickle Juice Salad Dressing. Simple ingredients. Inexpensive to make and much healthier for you than store bought, factory made salad dressing.
This Pickle Juice Salad Dressing is made with olive oil, pickle juice, Dijon mustard, finely diced pickle, garlic, fresh dill, salt and pepper. It’s ok to skip the fresh dill if you don’t have fresh herbs on-hand. So simple, yet so delicious. Use it as a salad dressing or a marinade for chicken.
You should always make your own salad dressings. Commercial salad dressings use toxic oils (usually soybean and canola) and add emulsifiers to keep the oil and vinegar from separating. There is mounting evidence that emulsifiers disrupt gut health and contribute to inflammation. Some emulsifiers have also been connected to colon cancer.
Emulsifiers are abundant in packaged food. Read labels to be aware of what is in the packaged food that you buy. Reduce consumption of emulsifiers for better health.
Dijon mustard is a natural emulsifier. Shaking the ingredients in a mason jar also naturally emulsifies your ingredients!
Make your own salad dressing for better fats, no emulsifiers and no sugar or other food additives.
Generally, any home made salad dressings are inexpensive and easy to make and the ingredients are always healthier.

Ingredients
- 1/4 cup olive oil
- 1/4 cup pickle juice
- 1 tbsp Dijon mustard substitute mayo
- 1 clove garlic
- 2 tbsp finely diced pickles
- 1 tbsp fresh dill optional
- 1/4 tsp sea salt
- 1/4 tsp black pepper
Instructions

In a mason jar, add all ingredients.

Secure with lid and shake to emulsify.
