This 90 second 1 serving “English muffin” is a great way to replace traditional bread when looking for alternatives. It’s quick to make and has only simple ingredients (almond flour, ground flax, egg, olive oil, almond milk (or water) and baking powder).

It’s also great if you want a piece of “bread” NOW but don’t want to take an hour to whip up a loaf. 

This “English Muffin” is great because it tastes good and it’s customizable.  Add herbs and spices or try different toppings – Top your English muffin with peanut butter and jam (try my One Jar No Sugar Peach Jam or my 3 ingredient No sugar Berry Jam), mashed avocado, just butter or a slice of smoked salmon or cheese.

Toast your English muffin for an even better tasting piece of bread.

Gluten free, grain free, dairy free, low carb. Diabetic, ketogenic and paleo friendly.

How to Store this GF English Muffin

Once the English muffin has cooled, it can be stored in an airtight container or ziploc bag. It should be stored in the fridge for up to 1 week.

Equipment

  • 1 microwave safe ramekin about 4 inches wide

Ingredients

  • 1 tbsp olive oil
  • 1 egg
  • 2 tbsp almond flour
  • 1 tbsp ground flax
  • 1/4 tsp baking powder
  • 1 tbsp almond milk sub water

Instructions

  • Add olive oil to a small microwave safe ramekin and swirl it around to coat the sides.
  • In the same ramekin add the egg, almond flour, ground flax, baking powder.
  • Stir until smooth.
  • Microwave on high for 90 seconds.
  • Let it cool slightly, slice in half and toast for a golden edge.

Notes

Don't have a microwave or prefer oven method? No problem.
Preheat the oven to 350 F. Bake for 10-12 minutes until set in the centre.
